On Friday of last week, Hillside Liquor Store received its first shipment of two favourite Phillips Brewing Beer: Instigator and Burley wine.

Phillips Instigator is a doppelbock, which literally translates to double-bock. A bock is a strong, German style lager, so a double-bock is even stronger still! The Phillips Instigator is full of malty goodness with strong rich flavours and a nice high alcohol percentage, although this beer is so smooth that it is hard to tell that it is 8.5%. This is a great beer for sharing with friends, or pairing with strong aged cheddars, Brie or Camembert, roasted meats, chocolate, nuts....pretty much all the yummy food that is found at this time of year.
Quantities of this beer are limited, so stock up soon!
The Phillips Burley Wine is their version of the barleywine, which is a strong and intense form of ale. It is always lively and fruity, with good balance between hops and malt and high alcohol. This is a beer well suited to aging, or pairs well with strong cheeses- think aged Cheddar, blue cheeses, sharp Cheddar- garlic sausage, raosted meats, chocolate.....or by itself.
This year's version comes in at about 9.8% alcohol, so be forewarned. Again, quantities are limited so it is probably best to buy a lot and age the ones that don't get consumed during this holiday season!
